Lovelies,

If you’ve yet to discover the loveliness of Cuppies and Joe, I highly suggest a Saturday afternoon stroll or Friday night gathering to delight on these amazing cups of cake! Since it’s grand opening moons ago, it’s been one of my favorite places to unwind, meet up with a friend, and just enjoy some great people watching!

The names of their delicious treats will make you giggle and the taste will keep you coming back for more. To me, there’s nothing better than a bangarang and a cup of soy milk! Located on 23rd and Shartel, it’s just blocks away from our humble abode granting super easy access for munching! Cheers and happiness!

Health Wealth and Happiness!

Lovelies, this year as the clock struck midnight I was snuggled in tightly next to my one and only as we watched the party unfold in Times Square. As one who typically enjoys a night out on the town to ring in the arrival of a new year, I have to admit the peacefulness of this year’s activities definitely alleviated the worry of inebriated drivers, etc. We did however, in the evening hours of New Year’s Eve manage to snag a cabbage from the nearest Whole Foods and the last batch of black-eyed peas in existence.

My parents are big on tradition and we always had cabbage and black-eyed peas on the table and a penny in the mailbox to ring in the new year. It’s said the foods bring health, wealth and happiness in the new year, and what can I say, I’m a sucker for traditions! Since the peas were already prepared, I flexed my cooking muscles to create some tasty cabbage! I wanted it to be cooked but maintain a crunch. Cabbage has a natural buttery taste, so there’s no need to add any butter to the pan which can lead to wilty, soggy cabbage. It only takes 5 min’s to cook this delectable dish, so start by getting out all of your essentials.

Cut the cabbage in half and core, maintaining long slices making it easier to cook in the pan.
Pour olive oil to cover the bottom of the pan and crank the heat to high.
Place the cut slices of cabbage in pan when oil is nice and hott! (You can put the whole head in at once)
Season to taste. (I sprinkled a healthy amount of both sea salt and black pepper and a handful of corriander as well)
Cook about 2 min’s or until the edges start to brown.
Turn the cabbage and cook for an additional 2-3 min’s.
Sprinkle with balsamic vinegar to taste and remove from heat.

Since the pan is extra hott, plate the cabbage immediately to prevent it from overcooking.

Voila! Amazing cabbage in a flash!!

Eat At Joe’s

Yesterday we headed up the highway to Stillwater, OK and took in an Oklahoma State Basketball game at the Gallagher-Iba Arena. The place was packed and orange was oozing from every seam! Even though our Cowboys came up short, the game was still very entertaining. With all that cheering we worked up an appetite for some Joe’s!

Eskimo Joe’s is quite the gem! Their noteworthy logo t-shirts have been touted as one of the most recognizable and collectible t-shirts in the world! And while their gift shop is tons of fun to peruse, there’s no denying how delicious their food is! One of my New Year’s resolutions is to eat better and I’ve been trying to make healthier choices at some of my favorite dining establishments. This was the perfect time to try out a more figure-friendly option. I opted for the veggie burger which came with a side of cottage cheese. Delicious and filling and I might have snuck in a fry or two from my husband’s chicken finger basket. Even if you’re not a Pokes fan, Eskimo Joe’s is worth the trip! Great food and fun apparel. Maybe I’ll see you next time I’m visiting!

Trim the Tree

Lovelies,

We wasted no time in getting out our tree and all of the trimmings this year! Here is a snapshot of our darling little setup.

With some patriotic undertones to our modest little tree, I topped it off with a bow of stars and stripes! We’ve added two new ornaments so far this year and here they are up close and personal!

The one on the left is handmade of shells fresh from our Hawaii honeymoon commemorating the year. Here’s to dreaming of sandy beaches! And we just received the one on the right as an early Christmas present from my in-laws! Celebrating our first Christmas together as newlyweds in style!

Irma’s Burger Shack

How I love thee burger dive! If you’ve not enjoyed a hot hamburger fresh from Irma’s with a side of hand-cut fries, then you my dear, are missing out!

The hubs and I recently enjoyed a nice evening at the original Irma’s location. With our Keep it Local cards we were even able to enjoy a discounted dinner at one of our favorite OKC hot spots. I opted for the Irma’s Burger, with a side of fries, never a disappointment. And the Oktoberfest brew accompanied the meal perfectly. For dessert we each chose a slice of chocolate pie. These handmade desserts are always to die for and when it’s this good, there’s no way to share!!

Since it was such a lovely evening a meal on the deck was perfect. With mood lighting and tempting treats it was the perfect night out in OKC. So go check out this retro diner soon, to whet your appetite for some homemade favorites!
